In the sweet coolness of the rolling Scerni hills,
just 10 km from the seashore, the organic agriturismo "Fattoria
dell'Uliveto" (translated, the olive farm) offers relaxation and
comfort for the body and spirit. The main building has 4
rooms available, and there are 2 private annexed apartments just a
short distance away. A lovely pool is set in rock and tufa.
Fabulous traditional farmhouse cuisine fully satisfies the client's passion
for good dining and unique products like "ventricina vastese" (a
local salami rich with special red pepper), in a restful place which
receives a limited number of guests in order to guarantee the quality
and authenticity of its products.
Some our specialties Ventricina – a variety of cheeses – organic
oils and wines made in-house – "lu ss'ame" (a grain and
legume soup) –"'ndurciullune" with mutton sauce (a thick
pasta which derives from the sheep-herding migration period) – Stuffed
rabbit – lamb cooked in a terracotta pot in the coals of the fire – duck
roasted in a wood-fired oven

Soup of legumes and grains This is a very old Scernese recipe, simple but
extremely enticing. When Spring would arrive but the new provisions
hadn't, the leftovers from every cupboard (barley, spelt, lentils,
chickpeas and yellow split peas) would be gathered up and cooked
with spring vegetables to make hearty dinners for the big Italian
family.
